These roasted chickpeas make a delicious, healthy vegan snack or a yummy topping to a salad.
Drain chickpeas and dry well using either a clean tea towel or kitchen towels.
In a bowl toss chickpeas in the olive oil.
Preheat the oven to 180C. Spread the chickpeas on a lined baking sheet and bake in the oven for 25-30 minutes.
Take chickpeas out, place back in bowl and add seasoning, mix until well coated.
Return to baking sheet and bake for further 10-15 minutes until golden and crispy.
- Dried chickpeas will need soaking to soften prior to step 1. You can do this by slowly soaking overnight (8-12 hours) in plenty of cold water. Or quickly by boiling on the hob for 1 minute before leaving to soak for an hour. Be sure to use plenty of water as the chickpeas will absorb water and swell as they soak.
- You can easily adapt these to your own taste by simply changing the seasoning and spices. They can even be a sweet treat if you replace the seasoning with some sweet toppings like cinnamon and coconut sugar.
